You’re not missing anything. Apple One is designed for people like you and your wife who use multiple Apple services, or individuals who use most/all of them on their own which is rare. Combined, you'd use around 1.2TB of storage, so you'd eventually need to upgrade, which can be done separately within the plan. Looks like you'd save a few $ each month, and after upgrading storage, you'd be a few $ over. The main advantage being that you and your wife can access all of these services.
