I'm by no means fluent but I have sweet little interactions with some of the Spanish-speaking folks in my work building. They might not always be super accurate but i try my best, and they definitely appreciate when i put in the effort. To "¿como estas?" my responses are always something like Muy cansada (very tired) / Más o menos (so-so)/ ¡Necesito más café! (i need more coffee!) I also will ask "¿A qué hora sales hoy?" (What time do you leave today?) because we leave at different times every day. It also gives you the opportunity to show off that you know numbers in Spanish ("creo que a las tres") Don't be afraid to say "lo siento, no te entiendo" or ask them to speak slower ("¿puedes hablar despacio por favor?") or ask "¿qué significa ?"
