On my laptop I can simply drag and drop items from my hard drive to whatever album I want but this seems impossible on mobile?!
No, I do not want to upload them normally first and then bother with putting all the pictures in an album.

You have to go in the Library section, then "photos on device" and open the album you want to upload. Then select all the photos you want to upload, tab the + on top and select the album where you want to upload the photos or create a new one. The worst part is that, when you select the photos, there is no a "select all" button but you have to select them all manually. At least you can group the photos by month but if you have photos during years can be annoying.

Background: Currently trying to implement a feature so that users on my site can upload their profile image to GCS.
I understand that there are two ways you could upload objects when using the client library:
The standard way (see here: https://cloud.google.com/storage/docs/uploading-objects#storage-upload-object-nodejs) and 2. doing it with a Signed URL (see here: https://cloud.google.com/storage/docs/samples/storage-generate-upload-signed-url-v4)
Just wondering which way would be better for my particular use case?

Do you want to upload the image from your users’ browsers directly, or send the bytes to your server and then forward to GCS? Direct uploads from browsers, as I understand it, are easier with signed POST policies: https://cloud.google.com/storage/docs/xml-api/post-object-forms#storage-post-policy-nodejs . You referenced nodejs client libraries, so I’m assuming your server is written in nodejs. If you plan to send the bytes to your server before forwarding to GCS, then just uploading with nodejs seems easy enough. I wouldn’t involve signed put URLs without a good reason.

If you are using Next.js to do the file upload, either PUT or POST can work. Signed PUT URLs will require you to sign the url on your server side, with the specific destination file/object name. Signed POST policies allow you to restrict things like file type and file size, but can use a single signed policy for hours or days for all users. In all cases you will want server logic to verify images are not reasonably small, of the expected content type, etc. There are more options, like making an upload bucket writable by anonymous users (but not readable), then user server-side logic to verify the images are safe before moving them to a bucket where the users can read the images. You just want to protect against abuses. How are your users authenticated? Are they using Google accounts, firebase, or something else?
