One month ago I decided to degoogle my phone ( as far as it's possible ) , I exchanged as many apps as I could for open source one. But the thing is I can't find a good pdf reader. I tried Mupdf ans Orion both medium. You have any other recommendations.
( For now I still use Adobe's pdf reader )

Desktop wise, Okular made by KDE project is great. On Linux and Windows. MacOS has a built in reader. It’s also in beta on IzzyDroid and Fdroid repos. As for the meantime with android, this one may s’be what you are looking for. Can also do ebooks.

They're all pretty bad (either they dont expose the table of content, don't allow you to select text, don't allow you to search, they're super slow on large PDFs, etc..) The best I found is ReadEra but it's not FOSS. Librera is similar and FOSS. Other than that you should know that Firefox can now open PDF files directly. Brave/chromium can view PDF but afaik it doesn't expose it to the system (so when tapping a PDF in your file manager brave won't be an option, but Firefox/Fennex will)

It seems that no one of the pure java pdf libraries will work with android because they use libraries that aren't supported by android. I think I read that iText is interested in doing a port to android but thinks that google should support them if they did, haven't got a source on that though.
Here is a project in work for writing pdfs in android: sourceforge.net/projects/apwlibrary Haven't tried it and it says that it only does simple pdfs
