Which language should I learn? I've been scouring job boards for security engineer positions to see what's in high demand, and these have been the most popular languages I've been seeing. So far I only know Java and a little bit of Swift.

Why not write a small program in each of the languages? That way you can see how they are all different when solving the same problem. This will help you form opinions on what parts of each language you like or dislike. If you're going to be choosing a career based on a specific language, it's probably good you enjoy using that language.

Learn to read them all. They're pretty similar to each other; it doesn't matter that Go says func and the other two say def. (Go is the most different because it's statically typed, but honestly this isn't a huge difference. Things can get a lot weirder.) As a beginner, you'll want to stick with one until you're comfortable. Then you can assume that you know the others, try to use them, and be surprised at how easy they are. You only need to focus when you're beginning programming or decide to master a specific language (and develop a good sense for how to write beautifully in it). But Security Engineers aren't hired to write lots of beautiful code. They're hired to configure systems and to ask uncomfortable "what if?" questions about them.

I came to Go from Ruby but I've been writing mainly Go for quite some time now and I forgot how it was to work on a Ruby project. For those doing this daily, with PHP, Python, Ruby, JS, ..., do you feel that there is a huge productivity gap between those languages and Go when dealing with web applications? (server side rendering)

IMHO, Python is more work to develop in than Go. Haven't worked in PHP or Ruby in over a decade, but I suspect they're just as bad. Go requires a bit more typing, but the result is more likely to be correct and when it's not correct it's easier to figure out why than in Python. In my experience, typing isn't the thing that slows me down, it's when something goes wrong and the language doesn't have the ability to help me quickly resolve the problem. Go is just way better at this than the "higher" level languages.

This is a "trap" question as productivity has multiple facets. I was very productive in writing c++ code but could hardly understand the code I wrote a few years later. With go it is as easy to write and very easy to read and understand code, even code written many years before for which I completely forgot the logic. I called it a "trap" question as most people reduce productivity to the writing code facet.
