Using the built in password manager on iPhone/iPad I realized the passwords created by the system are always in the format of xxxxxx-xxxxxx-xxxxxx, where x is mostly lower case letters, there’s always exactly one capital letter and one number. There are also no special characters used, except the minus signs which are always at the exact same spots.
I‘d think these passwords would be way harder to crack if they’d be more random. Is there a specific reason that justifies these restraints?

I suspect it's done that way to create passwords that are easier to read and manually type out without making a mistake. This would be helpful if, for example, all your passwords are on your phone but you want to access a password-protected service from your PC. A random 18-character long password is not made any less secure by inserting extra hyphens into it, but that does make it more readable.
