With Apple earbuds, you have the advantage of a (relatively) seamless experience when switching between multiple Apple devices. The xm3s seem to have multipoint pairing though, so two devices should be fine, I don’t own them myself though so I can’t vouch for them. But if you want to stick with Apple, the AirPods Pro are a very good upgrade from the normal AirPods. But in general, if any Bluetooth device is paired to an iPhone, turning them on / putting them in your ears should automatically connect them. Hey so basically, with the YouTube app on iPhone, any wireless earbuds right now will have lag.
This is because the iPhone does not support the Low latency codecs, only AAC at most which you’ll still be able to perceive as laggy if you’re picky. Does not matter if your earbuds support the low latency codecs, iphone does not.
However, with apps like Netflix, there is some backend software stuff that happens to ensure there’s no AV sync issue, even with AAC buds. The YouTube app doesn’t do this though.
Though, I remember that the AirPods are pretty good at eliminating AV sync issues regardless of what app you’re using on your iPhone. Not sure why, perhaps it’s the magic of the W1 chip.

Question is as the title states, I've tried googling but I literally cannot find an answer to this question. I've been looking to pick up some new wireless earbuds (eyeballing the Sony WF-1000XM3) but I can't seem to find concrete information on whether or not they work as smoothly as Airpods do. Like, do I just put them in my ears and I'm good to go or is there more setup to do?

You have to pair them the first time, but after that they'll automatically connect whenever you open the case. The Sony's in specific have NFC on them. With an android, you just tap the case against the back of the phone and they'll automatically pair. Iphones have NFC as well, but I'm not sure if you can do stuff like that with them.
