Why are you reinventing the wheel? Google 'analog audio bluetooth adapter' and there are a few $20 and up. They're stereo because that's it's main purpose but you can send the one audio channel to both headset speakers. I'm the biggest fan in the world of DIY and Arduino but unless you've got some specialised application this one is not worth the the time/$/effort. AAMOF actually there's nothing to design or build. You're talking audio this and bluetooth that and Uc over there to run the operation. But the bluetooth already has low level audio input. They have 1/8" jacks because it's what they do. Is there a device or something I can purchase to essentially make this wireless by plugging a transmitter into the consoles phone jack and a receiver to the phone’s phone jack. (Sorry if this is confusing) check comments for more info
There are headsets that you can plug in between the two devices. Plantronics devices is what you're looking at or something similar. I think I see a headset jack, which is where you plug it in, if that's the case. Basically, I’m sick and tired of the snarly clutter of a wired headset on my desk (connects to an old-school cordless phone). I can’t find a gizmo for sale, so I’m going to figure out how to make one. This seems like a great introduction to Arduino, but I could use a little direction.

Can you help me start narrowing down which board to use?

It will have one purpose: connecting a mono BT headset to the analog jack. It’s a ten-year-old headset, so I don’t think I need much in the way of processing power, speed, etc. Even if I need a different headset, it’d be just voice calls w/o wind, noise cancelling, voice command, etc. I can even do functions like mute and redial on the phone itself. I just want to ditch the wire.

I’d like it if it were pocket-sized, but it doesn’t need to be tiny.

I think this points to the Uno or Nano, but not sure where to go from there or even if I’m heading in the right direction. And once I’ve narrowed down the board, then what? Am I correct that I need a breadboard too? And then shields (modules?) for BT and the analogue wire connectivity? Is adding a rechargeable battery easy enough or should I stick with a 9v?

Other than a case (I can 3D model/print that), is there anything major I’m overlooking hardware-wise?

I am doing the exact same search. I have a Panasonic Cordless with BT, model KX-TGF570. I've been messing with this for hours. I can connect the Bose QuiteConfort 35 II headset to the Panasonic base unit Bluetooth using either the base unit, or one of the cordless handsets to set up the connection. But the Bluetooth is only in the base unit. This is not obvious at all from the instruction manual. I can answer an incoming call from the headphones, but I can't place a call unless I use the base unit. I can't place the call with the cordless handset, then switch to the BT headset unless I press the Headset button on the base. And if I move more than 10 feet from the base unit, the sound gets terrible. (I had the QC 35's for 2+ years before I figured out that the QC 35 has a built in mike. No information on the Bose site about a built in mike. ) Why isn't there a unit with a 2.5mm jack, that plugs into the cordless phone jack, that converts two way analog to bluetooth?
