I agree that it's better to do punchdown keystones - putting a plug on the end, only to plug into a jack that has another jack makes no sense to me. It's just another connection to possibly fail someday. If nothing else, crimpers are a lot more expensive than punchdowns, and punchdowns are simpler to me. Just moved and saw every room has phone jacks outlets in the wall. I originally thought they were Ethernet ports but realized they were not.
I would like to change out the phone ports for Ethernet.
Aside from all the crimping and work that needs to be done on the outlet / wall plate side, do you just run the wires down into the modem? What do I connect to? I can’t imagine they go directly to the modem because you would run out ports rather quick. I got like 6 rooms to set up and my modem doesn’t even have that many ports.
Can someone school me on where I need to connect each wire to and if I need addition equipment (which I imagine I do and what that equipment exactly does)

You need a switch. 8 port should suffice. A patch cable goes from the switch to the router, leaving 7 ports for the Ethernet runs from the rooms. Do not crimp male ends onto the ethernet cables, get a patch panel and terminate them with keystone jacks and then use patch cables from the patch panel to the switch.
