I got my Ipad when I was around 8 and my mom sighted me on to her Apple ID and I’ve had new iPads since then but I’ve always kept my data and stayed on her ID. I got a phone when I was 13, and I created a new apple ID for myself. Now, I’m 16 and me and my mom both want to switch my Apple ID on my iPad to the one on my phone, but I also don’t want to lose all my apps and photos. Is there a way to switch Apple IDs but avoid this?

Sign out of icloud and select to keep all your messages and photos. Sign into your new apple id and have your mom create a family group. Have her invite you to that family group as an adult. You'll gain access to all your previous purchases.

My 15 yo has had an iPad for years which has been linked to my Apple ID, but we’ve reached the stage where we want to switch it over and link it to his own Apple ID.
We have an added complication that mine is an Apple UK account and his is an Australian one.
I’m assuming there’s no quick and easy way of doing this and we just have to make a note of everything he has linked with mine and then buy it again under his account.
Our list of considerations so far includes: Apps App log ins Photos Safari favourite and Safari logins Audio books
He doesn’t have any music saved on there so that’s not an issue.
Will his photos stay on there when we shift?
And is there anything else obvious we’ve not thought about?

If you add the son's account to family sharing, subscriptions and purchases will, for a large portion, be available to them as they are now. There are things that don't support family sharing however.

Great questions. iCloud itself is a global service, regardless of location. It's the purchases and subscriptions that are going to be the complicated portion of this problem, because he would need to repurchase on his own Apple ID, unless you used his Apple ID for iCloud and kept your Apple ID as his Media & Purchases Apple ID (which would be limited to the UK app store, which may be fine).
