What features are missing in the Microsoft 365 E3 license compared to the E5?

What are the differences between Microsoft 365 and Office 365 licenses?
Microsoft 365 is a comprehensive suite that includes Office 365 along with Enterprise Mobility and Security (EMS) and Windows Enterprise. Can I combine Office 365 licenses with Microsoft 365 Apps for Business or Enterprise?
Yes, businesses can combine these licenses to create a customized solution based on their specific needs.
My org currently makes use of Office E1 and Office E3 licences, we're split into two different major areas (group 1 of 500 users, group 2 of 3.5k). Today we have about 3.8k on E1 and 200 users on E3, we also recently came over from GCP using the equivalent of E3 for the whole of Group 1.
Background out of the way we're planning on completing our renewal in Q1 next year and need to discuss we should move users to E3, we're under pressure to reduce costs but moving all of Group 1 into an E3 would still result in a large saving.
So there are obviously benefits with going with an E3 over and E1 and i'd like to build a case for a human, I'm aware of tools like https://m365maps.com/matrix.htm which are great for information but not so much at a glance and not so much for planning for the future e,g Loop being locked behind E3 soon.
What, in your opinion, some of the major or biggest reasons to move to using an E3 licence over an E1? Noting that Group 1 act like an HQ function, think IT, Tech, Finance, HR, Design etc.
