"So sad" and "very sad" mean the same.
In this sense they both mean "a lot" and they are both correct.

I don't think there are any particular collocations or concordance issues.
Certainly "very" is universal and will go with anything at all. I have tried "so" with as many things as I can think of and it seems to work everywhere as well.
