Le Creuset, depending on sizes, costs upwards of $200. The Hearth and Hand brand at Target is like 50 bucks for a 5 quart dutch oven that costs over $400 in Le Creuset and Staub. Anyone who whether these really are worth 5 times than what Hearth and Hand cost? Both are enameled. What gives? What's the secret "sauce" in the former that is supposedly lacking in the latter?

The difference is both the enamel compound Le Creuset uses as well as the six coats of enamel they put on versus most manufacturers who use 2. This results in a much more chip- and crack-resistant coating. EDIT: It's very similar to the difference between buying regular glasses and Libby glasses. Libby manufacturers glasses for bars and restaurants, and tempers the edges to be far more chip resistant because of the use and abuse in those environments. Also, the lifetime warranty coverage... that's a very significant component of higher end cookware, and Le Creuset is comparatively affordable (most LC pieces I've bought were on sale for $250-$300). Cheap manufacturers sometimes try to tout a limited lifetime warranty, and then put you through wringers to cover you... good manufacturers won't even bat an eye. They'd rather replace it because that's how you build brand loyalty and get customers buying 5-10 more pieces.

I like the price point and the design, but the first one I bought had a chip in the lid's enamel, and the one I exchanged it for has a small but deep scratch in the bottom of the pan. Am I cursed, or is that just the brand?

That's one reason why Staub and Le Creuset (and Riess for Carbon Steel) is so expensive - better enamel, usually two layers, less likely to break off more durable. With the cheaper stuff you need to look very carefully until you find a flawless one. QC is the first thing the cheap brands save money on. But if you find one, they work very well for many years.
