An API that I've been meaning to get around to is the Plaid API. Plaid fetches information from the users financial institution such as transactions, bank records, balances, etc.
Sounds a bit boring compared to OpenAI, but they offer a free sandbox environment that uses a dummy account, so you could probably wip up a cool proof of concept banking or budgeting app.

May not fall into the 'fun' category for some people, but data.gov gives you a variety of large datasets for free. Plenty of cool stuff from NASA, NOAA, and others.

Google has a ton of APIs available with a pretty generous free tier especially for personal projects. Maps, geolocation, etc. It’s a broad question though, and depends on what you really need out of your project.
