Just shared this as a comment elsewhere, and realized it could be helpful in general here.

  1. Take a screenshot, if necessary.

  2. In Photos app, select the photo.

  3. Tap Edit.

  4. Tap the Markup symbol.

  5. Tap the color circle.

  6. Tap the color dropper icon.

  7. Drag color picker circle over a color.

  8. Release picker when it is same color.

  9. If necessary, tap Sliders tab.

  10. View RGB and hex color values.

12/15/21 Edit:
Added the following information:

The default displayed hex code is for the Display P3 color space. Tapping the blue phrase (default Display P3 Hex Color #) pops up a menu with an option to show sRGB Hex Color #.

March 22, 2009 - It will depend on where you click ... you can do it all in iWeb. Add the photo to a page, bring up the color pane, use the glass to pick your color spot and to to the Hex Color pane that will be in the top tool bar of the Color pane in iWeb....
