How does one download a .iso or .dmg file of an OSX installer?
Apparently, I had reset a Macbook Pro that defaulted to 10.5, and it lacked the app store, and itunes wouldn't upgrade the Macbook to Catalina OS (I recently had Catalina OS, but after doing a full reset, it's stuck on 10.5).

iTunes has nothing to do with installing or updating macOS or Mac OS X. You must be confused with iOS. Older versions of macOS can be downloaded directly from Apple here https://support.apple.com/en-us/HT211683 The older ones are dmg files and http downloads, newer ones are installers and download via the App Store. Also, the oldest MacBooks supported by Catalina are from 2012. Mac OS X 10.5 came out in 2007. So I doubt the machine had Catalina before and defaulted to 10.5 unless it was using some third party patcher to enable that.

Do you have a particular version in mind? Do you have another Mac available to you to make the bootable installer? A 2012 MBP will run up through Catalina ( https://www.macworld.com/article/673697/what-version-of-macos-can-my-mac-run.html ). Open Safari, go to: https://support.apple.com/en-us/HT211683 , download the version that you want. Go to https://support.apple.com/en-us/HT201372 for instructions on making a bootable USB installer. I have personally used this method, no copy/paste for me. I got all of the old versions for that rainy day, and saved the instructions for re-installing them. Happy upgrading!
