E3/E5 don’t include an RDS CAL they include the VDA CAL which can be used to access a VDI environment such as a a Azure Windows Virtual Desktop. If you purchase your licences through a Microsoft partner it might be worth setting up a call and going through with them what you intend to do and let them make some recommendations. I use M365 Business Basic with EMS E5 for myself and the kids. We use AAD Joined devices with Intune, Conditional Access, phone MDM, email, and tons of ODfB capacity. Over the last three years of doing this, there have been zero compromised accounts or devices. Personally, I think it’s worth it just on the far superior Exchange email over Gmail. I’m on the business side of Office 365 so maybe I’m getting involved unnecessarily when you’ve got a Home question, but I just like Word and Outlook and wouldn’t be without it! More on reddit.com
