I'm on iOS 15 and whenever I open Instagram link it loads Safari or in-app Safari. I tried clicking open in option, there's no Instagram there. If I click open in app on Instagram page in Safari it just redirects me to app store

idk if anyone is still looking for a solution to this but i found one that u don’t need to delete the app for. basically copy a link to an insta post or reel and then paste that to ur notes. long press on it and then press open in instagram. it’ll become the default after that
