But I've heard both widely, and a chart of dialects suggests [æʊ̯] can appear in General American English, Miami, New York, and Philadelphia, and both Southern American English and AAVE use [æɔ̯], [æɒ̯] and similar (Wikipedia).

Answer (1 of 3): I think in this particular case, the -e is a sign for the dipthongisation of the preceding vowel. Even the convoluted English orthography has its rules ;). The original English word for mouse was mus, pronounced like “moose”. Same goes for “hus” and “lus” and so on.
