How do you connect the wires for a phone plug

I can’t speak to phone lines, but the magic of Ethernet is that you can do exactly what you propose. You’ll want a network switch (not expensive) as a central hub that you then connect to your router.
If you haven’t put ends on Ethernet cable before, it takes a bit of practice to get good at. Consider using premade cables or at least be ready to redo half of the RJ45 connectors you put on.

This is the main connection for FTTN. There are other telephone sockets in the house I assume are disconnected. Two sheaths come in. Both are 4 core red, black, blue, white.
On the right hand side is a yellow, white (2 of), and green cable. The yellow and green cable are both crimped to the fork connector but not stripped. The white wires are both completely oxidised and likely dont make a connection with the screw.
On the left are a red, black and two blue wires (one from each sheath). Only the blue wires seem to be connected to the screw. The black and red wire are crimped to a fork connected, but again aren't stripped.
Basically what I want to do is replace this socket for a modular one with an RJ12 for the NBN connection, and an RJ45 so I can run ethernet to the ceiling where I will install a switch. The idea is to pull the old telephone wires in each room and replace with ethernet.
I dont understand the pinout of the wires so Im unsure how I would reterminate the NBN connection to a new RJ12.
Inb4 "you need an ACMA cablers license for this". Lets just say its all hypothetical for educational purposes.
