I use a Country Living Mill! I'm in love with it, it's probably my favorite thing I own. It takes some labor to mill the flour (maybe 30 min for a standard 500g loaf), but it's honestly not that bad. I just put on a podcast/whatever while I'm milling to get it done. Make sure you get the little extender handle thing to make the milling easier. One thing I wonder about is the flavor difference. From what I've heard, manual mills make flour that taste better than mechanical mills. It might be bullshit, but something about how the motors heat up the flour as it's getting milled, and break down the oils that make up the flavor? I don't know if it's true, but I do know that the flour I mill with my Country Living mill makes absolutely stunningly delicious bread. It does seem like the manual mill makes flour that my starter likes better. In this article about Gérard Rubaud , an artisan baker who famously uses home milled flour, the author writes: "When I arrived at Gérard’s bakery, night was falling and he was feeding the levain, using a blend of [flours] which he had ground less than thirty minutes before, using a manual grinder, and then sifted. In his experience, using freshly milled flour is not only the best but also the only way to capture most of the wild yeasts packed in the kernel. He has also found that using an electrical grinder produces a coarser flour which is less propitious to yeast growth in the levain." This echoes my own experience. Really, though, they're not for everyone. I love how simple the mechanism is, how easy it is to clean, but simple it is to just sit down and mill a little bit of flour to feed my starter every night. But it does take work. A motorized mill would definitely be more convenient. And Country Living mills are pretty expensive.
Manual Grain Mill/Grinder Recommendations?
The Country Living mills are super pricy but nice. The difference between these and lower end mills is obvious when you use them. They’re easier to turn and they can range from cracked grain to cake flour fine. I’ve heard good things about the Wondermill Jr, and they can be easily rigged to a bicycle. I haven’t used one, but they’re about half way between the lower end mills and the Country Living mills on the price scale and widely liked. I’ve got a Roots and Branches deluxe mill and the optional motor. I’m happy with it for what I paid. The motor is definitely a nice add on for regular use. If necessary I’m pretty confident I could rig it to a bicycle. It will grind flour fine enough for bread but I wouldn’t want to bake a fine cake with it. Eventually I’ll probably invest in a Country Living mill, but this one has served me well for my use and it’ll be a fine backup. More on reddit.com

What wheat grinder do you use?
I have the Victorio Roots and Branches hand grain mill with the electric attachment. I like that I can use it manually if the power ever goes out. It was inexpensive and at the time all the more popular ones where sold out. I found it on Amazon and I’ver been very pleased with it. More on reddit.com

Milling flour with a hand-crank mill is extremely slow and tedious. It takes so long, you can easily triple your effort for a single loaf of bread. I find the proposition completely untenable. Save up for the Mockmill. More on reddit.com
