As nice as normal stereo headsets would be, with a 4 MO & toddler, I need an ear free to listen for crying or other drama, especially at night which is when I can play for a bit.
I have a cheapo MPOW M5 Bluetooth headset, but it's pretty crappy on game audio, battery life sucks, and becomes uncomfortable after about 30 minutes. I also work from home so take a few video/audio calls from my PC with it too.
Any recommendations? Or do you guys have normal headsets and just leave one side off the ear? I imagine that would get uncomfortable

Have you thought about open ear headphones? I love mine. Super comfortable, sound great, and the only thing I use in the studio as a musician where I can cover both ears (which is way better than trying to play with one side off) because I can still hear room sound pretty well. I have Audio Technica ATH-AD700s which they don't make anymore, but I think the 700x looks pretty similar.
If you need a mic just get a budget clip on/desk mic. The combo should be in the same range as a "good" headset, and you get the bonus of better cans that can be used without the mic if you want.
I've been using my gaming headset to take client calls, but when the client wants a video call it's a little absurd to be wearing, so I'm looking for a sleek headset or earpiece that has great call quality and background microphone noice cancellation that aren't airpods.
The Plantronics (now Poly) voyager 5200s seem promising, although the fact it uses Bluetooth 4.2 and not 5.0 is a turn off.
The blue parrot m300xt seems nice, although I can't find many, if any, reviews of it on Reddit.
For those that have either of the above two earpieces, are my concerns warranted? Any experience with them?
Any that you all recommend?

For non-video calls: my wireless gaming headset
For video calls: Shure MV7 professional style podcast microphone (has dedicated mute button) and had good background noise cancellation, paired with my truly wireless earbuds, or will try to find a sleek looking over the ear headphone that I'll use depending on the audience
When I don't feel like using a headset: Jabra speak 710
For travel/on the go: Plantronics Voyager 5220
