I’m beginning a project that includes several PDFS that I fill out daily. I’d like to hand write my notes on the PDF forms and then convert the handwriting to text. Is this possible in the paid version of GoodNotes?

Hey! Yes this is possible but conversion is done manually. You use the lasso tool to select the text you want to convert, then tap convert and it’ll present a pop up window with the handwriting converted. From there you can copy it. The conversion is around 95% accurate but it’ll depend on your handwriting. Alternatively you can use the OS level “Scribble” feature which lets you hand write in text boxes which then automatically converts it to text (straight away).

I need to take handwritten notes for a 45-video course, each lasting 2 hours. The course is filled with diagrams. But manually writing everything down would be a tedious process that could take me months.

Hi! I have written my journal / diary by hand in a simple notebook and already scanned all of it. I now have it as a PDF with good quality and I can read it and have it preserved. It lays around on my Synology NAS. However, Synology NAS has a "Universal Search" app which lets me search through documents and PDFs that have OCR in them. This is very useful and would be awesome for my diary because this would allow me to search through my past and find stuff really fast!
I tested around with OCRmyPDF on Linux but found out that while it's very good for documents containing machine text, it's not really that good for handwriting. It understands some words which allows me to search for some stuff, but it's not reliable and most of the recognized stuff is rubbish.
They do note that it's not good for handwritten text, though.
So my goal is not to turn my handwritten text to machine text. I want to preserve the handwriting in the PDF. I just want to convert it to a PDF-A with text recognition, so I can search through most of my diary. It doesn't have to be perfect in recognizing the handwriting, but let's say it should get at least 90% right. OCRmyPDF gives me about 1% correct recognition, which...well...isn't useful for my case.
Of course the tool should be able to run on Linux because I just don't use anything else. I don't mind if it's browser based, in a Docker container or a tool in repos as long as it gets the job done for me.

I don't think you'll find a good handwriting-to-text converter. GL with that. But, others have converted handwritten notes using Google Docs voice to text (which is pretty good and free). You cannot speak too fast for good accuracy, but, for most, it goes faster and is less tedious than typing. So, create a companion text document with page numbers to refer back. You might copy the text of each page into PDF annotations which are searchable with some PDF software.

The problem is that OCR requires a model to train it to recognize characters. Handwriting is super changeable, different people, different writing styles, even a different pen can drastically change how your writing comes out. Then there's a difference between written text that is unjoined versus joined. You could use off the shelf OCR models/solutions like with Tesseract, but your success will vary massively. You could train a model yourself that is specific to your handwriting. This might be worth doing depending on how often you will need to do this. Alternatively, assuming there is nothing confidential in your diaries, just scan all your pages, then pay someone on Fivrr to type them out for you. A couple of pages will cost you 5 or 10 dollars.
