Travelling to Edinburgh in July, and I found a few of these guided tours. Two of them are paid and one is free. Are the tours worth it? If the tours don't involve guides giving a more detailed and interesting history about the places, I would prefer to go visit the places on my own and read up on them myself.

Tours of the old city
Mercat tours do a vault tour that is more history based than a ghost tour.
The issue with that is that they only really have access to the vaults under their gift shop, which is only around 4 vaults.
You'd see just as many, if not more, by going for drinks in Bannermans and The Banshee Labyrinth.
Since most of these tours, like Mary Kings Close etc..., are businesses, they don't let other tour guides into their premises, so there isn't one single tour that goes round all of the vaults.
No matter which tour you pick, you're only likely to see a handful of the actual vaults, and you will be disappointed if you expected to see the whole underground city.
