If it's 22:25, would it be more common to say "son las diez y veinticinco de la tarde" o "son las veintidos y veinticinco"?
Also what are some ways to ask for the time besides "Que hora es"? Maybe something less formal

¿Qué hora es? is not formal, I use it with my family and friends all the time. Formal would be something like ¿me podría decir la hora?. And I would say son las diez y veinticinco de la noche, 10:25pm is nighttime for me.

February 24, 2021 - I do consider 12 AM night not morning, so I guess de la noche makes sense, however the correct answer for 1:00 AM was “Es la una de la mañana.” Is it not correct to say de la mañana until 1 AM? I think of 1 AM as night as well. You use "de la mañana" after 12 AM but you don't include 12 AM.

If you wanted to say "1:00am", would you say "la una de la noche" or "la una de la madrugada" or maybe "la una de la medianoche" or can we use "am" and "pm" in daily speech?

Anything past 12:00am or 00:00 is de la mañana or de la madrugada the latter valid only up to 5:00am (depending on the region, I guess). And yes, you can also say "am" or "pm" (a eme, pe eme). From my experience, this might be a little less common though. 1:00am - "{La una de la mañana ~ La una de la madrugada ~ La una A. M.}"
