Most serious foodies have better cookware than what I used professionally. I have the gamut -- a complete set of Mauviel copper (which I found at an estate sale for almost nothing); vintage cast iron; carbon steel; stainless. I'd go to a restaurant supply store and get a basic tri-ply steel pot. Those things take years of abuse in commercial kitchens and keep going. It'll be quite a bit more than $1 though. Another option, if you have some patience, would be to keep an eye out at thrift stores. You'd be surprised what you find some times. I just bought a nearly new all-clad skillet for $5 at one. Restaurants mostly use inexpensive no-name brand stainless steel or aluminum. Maybe some carbon steel if they need non-stick like qualities, but they don't usually need true non-stick because of the huge quantities of butter and oil they cook with. But anyway, they use cheap stuff from restaurant supply places so it can be 1) thrown in commercial dishwashers and 2) thrown away if there's a problem with it. And if they bought anything nicer, it would probably get stolen by the kitchen staff. The only nice things in a commercial kitchen are 1) large appliances/equipment and 2) chefs' knives that go home with the chefs that own them.
