Well, I can tell you this as someone that has gone way down this path… I have a Napoleon gas grill. I love it. I then decided I wanted a smoker so I bought a traeger 885 and really enjoyed cooking with it. That lead to roughly 442,000,000 debates with friends regarding what the best tool for smoking was. So I decided to settle this once and for all, and purchased a large green egg and a Weber Smokey mountain. Here’s my subjective opinion, hope it helps. If you want easy and good, go traegar. If you want some effort but great taste, go green egg. If you want effort but amazing taste, go Weber. The traegar is set and forget. Taste is good but it’s more like a hint of smoke flavor. Green egg is great but the ceramic enclosure influences the flavor. Maybe after multiple uses, it wears off but it’s there. Not hard to use but takes some time to get the unit to the right temp to smoke. The Weber is inexpensive and takes a bit of time to get prepped but the taste is outstanding. Worth the time, every time. It’s what I use when I want to kick back and just relax while smelling the meat smoking. Based on what you wrote, traegar is your best bet. Retired my old Weber gas for a Napoleon and it's been great. Got the sear station too but actually I've been using their charcoal insert a bunch. Great taste profile for foods that need it and can have the last internal burner going for other stuff. Hybrid-fuel dual-zone kind of solution. More on reddit.com

Previous was a BK 320, current is a Weber Spirit 315. BK had slightly higher BTU, slightly smaller grill surface. BK internals rusted like fuck (backed up by numerous consumer mentions of this), Weber I can't comment because I haven't had it as long but not as much mention of it. The extra BTU on BK are basically a non-issue because the Weber does low and slow a lot better than my BK did and sears great for that stuff as well. Weber is made in China now, BK is Canadian. I'm Canadian and found the Weber better built. Your price point may differ, there's only 2 of us so I always just buy 3-burner models. Napoleon I did own a loooong time ago so my experience there wouldn't be current. I've always found them to be somewhere between the other two.
