I bought the standard bistro grinder a week ago, will be returning it to get an encore instead. For $40 it’s probably the best grinder you can get, but it has two frustrating issues for me. The plastic grounds collector doesn’t fit snugly enough, so you get grounds flying out every time and making a mess. It’s also difficult to remove from the grinder, so every time you pull it out you risk spilling more grounds. Also, it doesn’t have markings or numbers to indicate your grind size, so if you’re experimenting with different grinds it’s difficult to recreate a specific coarseness. Bodum Bistro Grinder - Recommended Setting for Chemex?

I use the setting two notches to the right (coarser) of auto drip. Seemed to work great for me. :)

I got a Chemex, Bodum Bistro grinder, and a CJ4000 scale as a birthday present. What I don't have is any idea what I'm doing.

Well, I hate to be that guy but start by reading the sidebar, lot's of useful stuff there.

Then do a search for Chemex in this subredit. what I have learned so far is that there isn't a perfect amount of water per grind per coffee weight, it's something that varies depending on the coffee bean and your taste in coffee.

I'm learning how to use this particular method too and what I'm doing is trying different grind size and amount of water and keeping a log on a notepad so I can figure out what works best for me and being able to reproduce the results later.

Here's a video that I saw here recently that's a nice guide for beginners, and here's the discussion thread.

Just in case, right now with the beans I have I'm using 21gm of coffee per 350gm of water.

April 15, 2020 - We've been using a Bodum Bistro for two years and it seems good to me (works steadily, hasn't broken, etc), but I was using a wee hand grinder before that so can't compare across electric grinders. I will say there's a lot of static electricity in the grounds when they come out (this may be a problem for all burr grinders?), so I grind the coffee first and then set everything up to brew so the charge dissipates before I move the ground coffee.
