r/Hunting on Reddit: Duck Vs Goose: which tastes better?
October 10, 2019 -
I was watching FLAIR on YouTube today and they had a taste test between duck and goose, and flair swore that GOOSE tastes better than DUCK.
This really threw me, Ive always heard and believed that goose is typically gross because its leaner and tougher. Although I have eaten goose before aside from just jerky, usually roasted in a crockpot. Duck on the other hand I've found to be fattier and has better flavor because of it.
I'm interested to know what other hunters think, is Flair crazy? Am I crazy? Have I been missing out on some God-teir meat? Let me know what you think.

Flair is an idiot dont watch that bullshit. Goose is tougher. Taste isn't necessarily different though. Both are great if grilled rare to med-rare

a lot of people over cook duck and goose, and just don't know what to do with it. When their meal comes out bad, then it must be bad meat. In reality it's bad cooking most of the time. Same deal with that store bought thanksgiving turkey that is so dry you need two glasses of water to eat it. It's not the turkey, it's the cook. It's just a personal preference thing. I'd give goose a very slight edge.

Waterfowl Hunting - Do geese taste better than ducks? - Because ducks are gross! I shot a honker and am wondering if I should cook it or make jerkey out of it. I dispise the taste of ducks so I make them into jerky and I would hate to waste a goose if tastes like ducks. More on huntingnet.com

How similar does goose taste to duck?
Goose is richer and sweeter. Goose breasts make great summer sausage and jerky. If roasted, slit the back in a few faces and set on a rack in a roasting pan to let the fat drain away. More on reddit.com

What Are the Health Benefits of Goose Meat?
June 16, 2024 - A young goose has tender meat and weighs anywhere between 12 and 14 pounds. If you buy goose meat, it can also come from a mature and spent breeder. Regardless, goose meat is flavorful and fatty, so it comes out best roasted. Although it is commonly referred to as ‘white meat,’ it has the color of dark meat.

Subsequently, researchers at the German Institute of Home Economics (DIL) and the company GMT developed a process to apply additional fat to duck liver meat at high pressure.

September 23, 2025 - Both ducks and geese have dark red breast meat that should be cooked rare and if it doesn’t overcook, it tastes similar to beef. Cooking either too much brings out a liver-taste that most people dont like. The legs of both ducks and geese can be slow-cooked very successfully. You can also render goose and duck fat for frying potatoes and other things.

December 15, 2022 - The best way to cook a whole goose is to roast it slowly with lemon, wine, herbs, salt, and pepper, or to break it down before roasting it into pieces. If it is broken down, you can do the legs confit style and the breasts medium rare (145-150). They are red meat birds, so only the wings and legs need to be cooked past 165 for tenderness. September 11, 2014 - They are very skinny and useless for meat though. Someone mentioned muscovy ducks. They look, act, and taste differently from other breeds. They don't quack but they need a roost to sleep on at night. Some people don't even consider them a real duck. So do your research not just on duck or goose, but duck, goose, or muscovy.

July 14, 2012 - I like goose better. It's closer to turkey. I found duck too strongly flavored. It was like the darkest meat from the turkey times 10. Normally I avoid the dark meat on a turkey but it's edible and goose is about equal to that in flavor. I've actually seen a few people who like duck complain that goose lacks flavor and most of those people don't like chicken or turkey too well.

Good roast goose generally has more fat to meet ratio, so it is juicier than roast duck. However, in recent years, I would say that there are fewer and fewer places that do roast goose well. Most places make fairly mediocre roast goose, so you end up thinking roast goose is relatively average for its heftier price. I would say that good roast goose is better than good roast duck, but you need to find the right restaurant.

January 11, 2021 - This meat remains largely underappreciated in our kitchens, while it’s not only tasty but also healthy. It’s a source of vitamins A and E, and B vitamins. Duck fat contains high amounts of unsaturated fatty acids: oleic acid, linoleic acid, and linolenic acid. The acids support the reduction of the bad cholesterol and the increase of the good cholesterol. They also improve brain function. Eating goose is recommended to people suffering from heart disease.

January 12, 2006 - The larger goose fillets offer a few more options as far as presentation & recipes go. So far, Specks are tops, followed by Canadas and then Snows. Some buds from SD tell me Snow geese are okay, but they say jerky is the best wayto preparethem. That being said, for Thanksgiving Iblackened fillets from a Canada & a mallard. Bothgot good comments, butthe duck came tasting better.
