I know, I know, it's better to go for one good, high end, Victorinox than a block set, but I do actually need a set of knives. I will probably buy another single santoku or chef knife in time though, I just want to know if these are good for daily use in the meantime and if they retain their sharpness more than the cheapos. October 11, 2000 - I spent a year trying to keep my old room mate's set of high end Henckels sharp. A decent edge never lasted more than a couple of days. Now that I have a nice collection of Spyderco kitchen knives, I'm amazed at how good they are for the money. The handles are a little on the cheap side, but I can hack up a few chickens with the chef's knife and still shave hair.
