I've got a beautiful old wood table that's unfortunately got all manner of water stains on it. I want to refinish it as a surprise for my wife. I assume I will have to sand the whole thing down and then restain it. Do you know of any guides on how to do this, for someone who has never done it before?
For example, should I use a belt sander on it, or try to do it by hand? How far do I need to sand down? Will it need primer?

If there is any finish on it then use stripper. Scrape off the stripper after appropriate time. depending on how much is on there it may take two times That will pull finish and some stain out. Then sand and re-stain/finish. I I have done it both ways and FUCK just sanding. The finish will wreck the sand paper/belt quickly. Have fun. At this point I would much rather build furniture then restore or refinish.

Don't start with sanding. You don't specify what the finish is, but I would start with a chemical stripper. Stay away from belt sanders; they are far too agressive and will change the shape of any surface they touch. You may be able to fix the water stains without refinishing the whole piece too. Flexner's books on finishing are quite thorough, but I'm not sure they cover the topic of refinishing. Check with Popular Woodworking to see if they have any guides.
