Polishing steel with angle grinder
Unless you decide to lap or burnish you wont get a high surface finish. Lapping and burnishing is the process of using similar or like metals with a polishing paste to bring the surface to high lustre.
My suggestion would be to get a shaft with squared and true flat face to spin by hand against your part, easiest done with a bench grinder with the guards removed, make sure you do this with the power unplugged/locked out machine.
Angle grinding for a high surface finish is probably the worst way to do it, use a series of files ending with your smooth single cut, then work up to 1600 grit with a very small amount of oil, 10w-30 is very common and acceptable. You wont get much higher than about 600 microinches of finish, but thats near enough to mirror, not perfect but thats where lapping comes in, watch some videos and get it all figured out.
