In this situation as long as it's screwed down use whatever is cheaper. The 3/4 subfloor is providing the no flex structural strength. Just make sure your level is within the products tolerance. More on reddit.com

I'm laying down vinyl planks but to bring all my floors to the same level I would have to lay 1/4 plywood in two rooms. Can I lay foam underlayment over the top of that without an issue? I haven't been able to find anything about that online.

The ply buildup is fine. Like stuperdan said, just make sure it’s an approved lvp pad Only thing I’ll add is that if you’re looking at doubling up pad(I’m assuming the lvp you’re getting already has pad attached.) to get an extra 1/8” in height or something, don’t. If you’re within 1/8” a t-mold will probably forgive that remaining height difference. Or, better yet, put down 3/8” ply instead of 1/4”.
