What, exactly, is an embedded systems engineer?
Embedded Systems is rather broad and poorly defined, unfortunately. I've seen "embedded" systems that use Linux or Windows, usually stripped down, or full fat Android like what you see in car infotainment systems. A more traditional definition is software engineering pertaining to microcontrollers in low power / constrained processing resources situations. Eg, an embedded software engineer programmed a microcontroller inside that VFD you're using. Typically, low level embedded systems (Fitbit, microwaves, lots of handheld devices or toys, battery powered sensors, etc) are programmed in C or carefully limited C++ by people who understand what processor registers and peripherals are. They tend to require power-efficient code and working closely with electrical engineers. Lots of embedded software engineers come from an EE background rather than CS or SE because of how deeply it's tied into electronics. For a thorough, formal introduction, check out UT Austin's three Embedded Systems courses on EdX. Just looking at the syllabi will give you a pretty good idea of what you need to know to get started as an entry level embedded systems engineer. I don't know much about PLCs, but my guess is that there's significant overlap between your knowledge base and that of a typical embedded systems engineer (microcontrollers; maybe less so for embedded Linux).
