The offset design is going to be hard to match. You'll need to get your hands on the internal sink dimensions of another similarly designed sink that's a drop in if you want the minimum amount of cutting. You'd probably have to open it up a bit to fit the sink bowl portion down into the cutout. You may have to grind the clips of the sink off if they protrude below the drop in rim and are going to land on the granite. To seal it, you'll probably have to just use a bunch of silicone and fill it with water to sit overnight, instead of using clips. Most standard drop ins are approx 33x22 overall and use a 32 1/4 x 21 1/4 cutout with radius 1 1/2. The rim of the sink can vary but is probably close to 2". So, 29 x 18 is pretty close to what the actual bowl dimensions are going to measure on the big side. So you may find another big/little style that fits in and also covers the old faucet hole. If you're looking for another sink design, I don't see a way around at least notching the cutout square. and getting rid of the faucet hole. It's really hard to search for something like a "30 x 19 drop in" but that is essentially what you are looking for. They do make drop in sinks that don't have the faucet in them, similar to this: https://www.amazon.com/Miuara-White-Single-Bowl-Accessories/dp/B0BYTR7174?th=1 You will just have to make sure the faucet hole will be cut out and completely covered by the dimensions of the sink. The alternative is to just open it up to either a 30 x 22 or 33 x 22 drop in cutout. (so 32 1/4 x 21 1/4 or 29 1/4 x 21 1/4 for your cutout, and it would potentially have 1 1/2 radius in the corners depending on the design of the drop in. You'll have to verify the cutout removes/covers the old faucet hole and still leaves room in the back of the cabinet for the faucet. This will probably mean having to take material from the front and back of the cutout. I don't really know how to search for them but I'm pretty sure they make 30 x 19 overall drop in sinks that have the faucet ledge on them. 30x19 is a very popular dimension size for undermount workstation sinks though, so googling it will mostly return those sinks. I don't know how to find ones specifically that size, I just know our shop has had customers who used them in cases where they have old cabinets that are only 21" deep. More on reddit.com

Finding an undermount sink with matching cut-out is like a needle in a haystack, if not impossible. They are all slightly different. Going from a square corner to more rounded means it definitely wont be the same. It's either a new countertop, drop in sink (ew) or living with it unfortunately.
