This rather looks like it has been created in 3D software. The first 2 with the stacked letter shapes cannot be created in Illustrator exactly. Also the shading and stuff: you would need to invest a lot of time doing that in Illustrator and Photoshop, which would probably be just some materials and lighting in 3D software. If you have it, try Adobe Dimension for it. You could create the models in Illustrator (even the stacked ones, arrange and then shade them in Dimension. More on reddit.com

Thank you u/mike365smith for linking this thread at the OP's other post. As you suggested, bespoke 3D software would be easiest. Artists have been creating the illusion of three dimensionality for centuries, so of course it's possible to do in Ps. If I had to try, I'd create the shapes of the letters using the pen tool, the elongated sides of each letter would be separate paths, the bottoms would be separate paths. Then I'd use gradients, either through selections created from the paths or using the paths as vector masks on gradient fill layers. It would take some time, but I used to doodle things like this in class when I should have been listening to teachers. I wonder if the OP is ever coming back to see the responses? More on reddit.com
