If you're getting this mainly for gaming, the 7800X3D is the one to get. The 7950X3D isn't any faster for gaming outside of one or two games where it sees marginal improvements. We don't yet know for sure how the Radeon 9000 CPUs will fair since there have only been a few limited benchmarks. AMD themselves have said that the 7800X3D is still faster in games, and that the 9700X is faster in games. The CPUs haven't officially been released, and as of the beginning of the month no reviewers had gotten them from AMD for testing. You may want to double check as pretty much all boards that supported 3rd gen Ryzen can support the Ryzen 5000 series (the final gen for that socket) with a BIOS update. The current list of supported CPUs along with the required minimum BIOS version will be listed on your board's website. But to answer your question in case you were curious, it's all models that start with 3 or 4 excluding models that start with 3 and end in G. I.e. 3000 series and 4000G series but not 3000G series. Slightly updated Ryzen 2000G for the 12nm process. Zen+. Ryzen 3000, released 2019. New architecture, Zen 2, with significantly higher performance, up to 16 cores / 32 threads. 7nm TSMC. Zen 3, a new architecture, details will be available later today. GPUs: They are all called Radeon, typically Radeon RX. Radeon RX 570 to 590. Older architecture, GCN 4. These are entry level chips still being produced. 14nm. Radeon RX Vega, Radeon VII. These use the latest GCN revision (though this has also been slightly updated with time). These are higher end than the RX 500 family but no longer being produced. 14nm for Vega, 7nm for Radeon VII. Radeon Vega integrated graphics. These are available in the G variants of Ryzen CPUs. They use a similar architecture to the Vega desktop graphics. 14/12/7nm. Radeon RX 5700 XT, 5700, 5600 XT, 5500 XT. These use the new RDNA architecture. 7nm. Radeon RX 6000 family (expected name for GPUs launching on the 28th of the month). Use the RDNA 2 architecture. This adds ray tracing and other features which were missing from previous AMD GPU generations and available in NVIDIA's Turing architecture.
