Does anyone follow a “hashimotos diet” and if so do you feel a difference?

I have read scientific papers that claim there is evidence of celiac disease coinciding with Hashimoto's thyroiditis. However, the percentage of patients they found with evidence of any celiac disease markers or symptoms was less than 6%. Not rare, certainly, but it is still less than 10%. If you're curious, I'll find the paper. I don't have it bookmarked on mobile.
I'm trying the no gluten thing. I've also seen the sites saying to go on the autoimmune diet and it lists everything under the sun that you can't eat and I think that's absolutely impossible for some people to even afford. Start buying only organic fruits and vegetables and avoid all grains (even gluten free ones), avoid dairy, avoid eggs, eat only grass fed meat, blah blah blah. Seriously? I'm gonna feel like crap for at least 30 days. My wallet will be empty because I still have to feed my family after buying all of that expensive food just for me. Oh, and the list of fruits and vegetables I have to avoid is ridiculously long!! And i can't eat them raw. Goitrogens! Oh no! eye roll So, buy organic, but only these things, and find a way to be happy doing it? You'll tell me how if I buy your book? No, I can't ask my toddler and husband to go on an autoimmune diet. There isn't going to be time to cook meals for just myself.
I've heard people say they stopped eating gluten and their antibody levels went way up. I've heard others say it goes down. People who feel better without a gluten free diet still have high antibodies. It's really hard to study this because the variables in agricultural products are everywhere. You can't eat the same banana twice.

I experimented with going gluten free and the bloating issues I have always experienced had lessoned big time. I have been a vegetarian for 10+ years and the more I look into hashimotos, the more it seems that soy and gluten are bad, making my diet options pretty difficult to figure out. I’m considering slowly introducing meat into my diet in the new year, but it feels crazy to consider eating meat. I just wonder if it would make a difference, less inflammation less getting sick etc etc?
Does anyone here follow a strict Hashimotos diet with positive results?

I just want to add an update that I changed my diet from gluten + vegetarian to no gluten and introduced meat starting in January. I mostly eat chicken and the occasional beef with rice and veggies. I feel a huge improvement. I lost 10 lbs without much change in exercise and I don’t experience brain fog. Also, I used to experience this pain in my neck and lymph nodes in my armpits and that has completely disappeared. I mostly attribute the improvement to gluten free. Every once in a while I have a bagel or pastry and I feel bloated and brain foggy and I get over it within the day especially if I go for a long walk or something after. It sounds like everyone experiences hashimotos differently but I thought I should share my update in case it is helpful for anyone else!
