How is this guy able to index all the pages of this website on Google, from my limited knowledge react does not render the pages on server which is important if you want to generate sitemap but in this MERN project he was able index all these pages on google successfully, Also he didn't used Next.js

Google can index client side rendered (CSR) apps. However, there is some nuance to this. CSR apps need to essentially run in a browser to be indexed which is slow. Also, I believe Google crawls sites on a time budget, meaning if you have a lot of pages and each pages takes longer to crawl there is a chance some pages won't get indexed or might get delayed. This also affects updating content. CSR apps usually don't have the best Core Web Vitals which affect search ranking. The site you posted fails LCP and CLS according to PageSpeed Insights. It's not impossible to get good CWV with CSR but it is harder. SEO is not just about search engines. If you share a link on Reddit or Twitter those sites also index your content and might not have the infrastructure that Google has. SSR helps in all of these cases and leads to a more performant site which is why it's recommended, especially for content heavy sites like blogs.
