You could sync them to a computer in the time honoured fashion, and deal with them as you choose from there, or include the old phone as part of your iCloud ecology and sync the photos to iCloud Photos. I sense an unasked question also - the iPhone does not need a SIM card to work for you; it just won't receive phone calls in its own right, although it is capable of receiving calls forwarded via Wi-Fi from your current phone. It could also be used as a webcam with some third-party software from the app store. You didn't specify what sort of camera you were asking about in your question, but it's worth mentioning this potential use.

If the mic driver is 32bit, then we are probably at Apple's mercy. I have a feeling that's the issue. The iSight works great in Mojave. ... I just connected my old iSight firewire webcam to my 2014 mac mini. I used a DisplayPort-FW800 and a FW800-FW400 adapter. Picture works ok (a bit laggy though) but no sound. I run Catalina 10.15.6. How your video @RobD38? Is it laggy or smooth? ... I have a cheap chinese webcam, and similar to yours, I can launch facetime with both cameras to choose from, but isight audio is not recognized.
