You’re not missing anything. Apple One is designed for people like you and your wife who use multiple Apple services, or individuals who use most/all of them on their own which is rare. Combined, you'd use around 1.2TB of storage, so you'd eventually need to upgrade, which can be done separately within the plan. Looks like you'd save a few $ each month, and after upgrading storage, you'd be a few $ over. The main advantage being that you and your wife can access all of these services.

iCloud Storage is shared, meaning you only get 200 GB once and share it. But your files are still only visible to you (unless you decide to share)

The costs are for the entire subscription, for up to 5 6 people. 1 person, the one subscribing, will pay the full price, so you’ll have to figure out the payments yourself. All of you get access to Music, TV+ and Arcade with your own account. The 200GB of storage is shared, so if one person takes up 100GB there will only be 100GB left for the other 3. What you store is private though, it works just like private iCloud storage in that sense.
