I was in the exact same position, but then something I didn’t expect happened. Even though I had initially vetoed it right off the bat, Starlight kept nagging at the back of my mind, and eventually I realized I was sold on it.
I agree though that the choices Apple made with the colors is a little bit odd. Your darkest and lightest colors aren’t truly neutral. The darkest skews deeply bluish, and the lightest has a goldish champagne tint.
This wouldn’t be a big deal on a device like a phone, but your watch is meant to be paired with a band, and the tinted options mean that there is a potential for some clashing. A band that is truly silver for instance, would probably look out of place when paired with starlight.

Hello guys, tomorrow I would like to preorder my first Apple Watch, my only dilemma was the colour: personally I love space grey, but this year we have Midnight and Green. I think Midnight it’s too blueish, but I don’t know if it’s just me feeling that more then black it’s blue. Then we have green, but also this colour it’s not something comparable to Space Grey, a universal colour that fits with everything. What are you’re thoughts?
Edit: Anybody knows if there is already or when it will available the new Apple Watch Studio mode?

i went to an apple store today out of curiosity of the new colors, so I looked at the iPhone 13s and the new iPad minis. The colors are surprisingly more neutral in real life than in the renders. The midnight iPhone 13 looked black. When I looked at it under certain angles, i could see the bluish tint. However, without closer inspection, it really looks like a matte space black. Same with starlight. Without closer look, it seemed silver to me. Once again, under certain angles I could see the champagne tint of the sides, but it seems more muted in real life. Maybe it will be different with the watches, though I imagine that it will be similar.
