Most of the better Sheet Vinyls today can be bought by the cut so you are not limited to the crap paperback stuff that builders use. They make a number of good glassback products (Mannington, Armstrong, Congoleum and Tarkett) that will serve your purposes pretty well. Some of them are even considered looselay, so you can use pressure sensitive adhesive. That is a big kitchen if you are over 12 feet wide. More on reddit.com

Just bought Armstrong vinyl premium roll flooring for my kitchen. Contractor rolled it out and started relief cuts as I was watching. We he go 3/4 of the way done the flooring had several defects. I am the one who was with him as I purchased it at Menards. It was on a fresh roll and recent manufacturing date so it wasn’t old stock. Anyway. I called Armstrong and asked about their warranty. They said not their problem. Call where I purchased. Went to Menards and talked to customer service Manager showed him pictures and reciepts After getting runaround. He offered $24.00 refund on over $900.00 of flooring. I immediately called their corporate office and also got runaround. I then called Menards. Credit Card issuer and put in decrepinsy and. Told them about defective product. They aren’t getting paid until I get just reimbursement. Contractor says he can cut and seam repair the flooring but will cost me over $250 extra. Have you looked at Marmoleum? I think it is better, and the cost is not unreasonable. Usually around $4 a square foot. Comes in thousands of colors and designs, and is environmentally friendly, being made primarily from linseed oil.
