If you're using a single GPU, that should be plenty. If you have a high quality PSU, then you could probably get by with less. I'm using a nearly 10 year old EarthWatts 750W, which is 80 PLUS Certified.
A second GPU will have the lion's share of impact on your PSU.

I see the documents state that 2nd Gen Ryzen with Vega graphics is supported, but what about 3rd gen like the Ryzen 5 3400G?

Yes the integrated graphics card from the Ryzen 5 3400G would work with this X570 motherboard. Fun fact is Ryzen 1000 series does not have a G series for integrated graphics. So technically the Ryzen 2000G series would be "1st gen" and Ryzen 3000G series is "2nd gen" CPU that supports Radeon Vega graphics. Hope this clarify somethings.

Will the M.2_1 location below the GPU slot cause clearance issues with large SSD heatsinks? And if it does fit, is that an airflow/thermal concern?
Hello,
The height clearance from the pins of a GPU to where the shroud normally starts is about a little less than an inch, so the SSD might be a little too close for comfort (especially with a heatsink attached).
As far as airflow and thermals go, I think as long as you have good intake airflow from the front of your case, it should be enough to passively cool the SSD. With that being said, you might also get some passive heat from the GPU because of how close it is to the M.2 slot, but I think monitoring the temps yourself will give you a better idea of how well it performs as well as how

I'm looking to upgrade my current CPU, mobo, and ram but I want a black and white aesthetic. I was looking at the G.Skill Neos ram and a Ryzen 7 3700x. How is the Asus Prime X570-Pro as far as VRM cooling and reliability? Any other boards y'all would recommend? I'm not ready to pull the trigger quite yet, just trying to get an idea of what I want to go for.

I've owned the Prime X570 Pro $249.00 since July 2019, with a 3700X. Great VRM, Ram at 3600mhz, Intel Gig LAN, with great onboard audio (Realtek 1220A). It's Super stable with Frequent BIOS updates. If you want an ASUS Motherboard, something a bit better ROG Strix X570-E (NOT THE -F) $299.00. If you want something a bit less expensive (but still great) TUF Gaming X570-Plus (Wi-Fi) $175.00.
