This is more modest than the others, but my mom got me an immersion blender a few years ago for Christmas. One of those “how did I live without this?!” gifts.

don't gift kitchen gadgets or tools. Since your mom is an accomplished cook only she knows what she really needs. Go for top-notch gourmet ingredients that have to be ordered online: truffles from Alba, uni from Santa Barbara, Snake River ribeye's, snow crabs or blue king crabs from Alaska etc.

My mom is a pretty accomplished baker, her croissants are fantastic and pretty professional looking.
She also cooks babkas, scones, cookies, cakes, breads, etc she tries a lot of different things.
She is probably best at croissants and really enjoys those.
Any ideas on gifts for her this Christmas? She owns a lot already, an expensive mixer, piping tools etc.
I thought maybe I could get her some really high-end or professional versions of mats or sheets
