Move the toilet farther from the shower if you can. Get a narrower mirror, one that is slightly less wide than the vanity,. Center a light fixture over the mirror. Put a recessed medicine cabinet to the left, maybe get one custom made that is taller than usual. It can be open shelves too, but I would recommend doors. Get a good sized wall cabinet above the toilet if it isn't a problem with the shower. Maybe you can steal a few inches for depth from the adjacent closet to do something like this photo. Just my 2 cents but I wouldn't do a bifold. I'd swing a single door away from the vanity. You could probably get away with leaving the majority of drywall, especially if the ceiling has the attic above it. Most people change the type of lighting and location as well as upgrade fans and such. You could lay over top of the vinyl if you wanted, you will need a threshold that steps outside of the bathroom, which more than likely the transition will be up and into the bathroom from the hall just because of the height of the floor with putting things on top. But it's hard to tell. You can seriously do anything you want to that bathroom and every little thing that you want to do will cost money. If you leave the locations of everything in there the same you can keep the cost down. I would absolutely plan for a complete demo, down to the studs on that shower and let someone build it for you the right way. Keep in mind that if you decide to do sconces on each side of a vanity mirror, electrical will need to change and that will cost you additional money for the electrical and the drywall. The best thing you can do is to design that bathroom, how you want it and get two or three quotes. Ask what kind of material they use when they build a shower and what their process of waterproofing the shower is. Take notes and compare. Pick the person that you believe is going to do right by you even if they are the most expensive.
