Do they exist? Meaning, actually good ones? So many games are made for the 'standard' family of 4.
We're a family of 3, with our kid being a very intelligent, mature 9 year old. We have had over 100 games come through the house, sitting, I'm sure, over 50 right now. However, most things we're always changing slightly so we can play as 3 however.. as the kid gets older, it's not fun for anyone anymore to have someone be on two teams.
We have so many different types of games, from word games to card (Kill All Unicorns, Exploding Kittens, Magic the Gathering etc [we have a lot of this type]) to the old basics (Catan, Monopoly, Key to the Kingdom, Trouble etc) to things like Mysterium and of course the more activity types like Pictionary and versions of Trivial Pursuit type games.
We haven't really found any that we continously go back to unfortunately. We all peruse huge game stores sometimes finding something, sometimes putting things back due to the $100+ price tag.

I own a copy of Three Kingdoms Redux (which is exclusively 3-Player) but I've yet to get it to the table...
What game is your go-to when you have a group of 3?
For me, Dune: Imperium is damn near perfect at 3
I really like Brass Birmingham at three, its a player count where a lot of games can fall apart because when two players start competing the third will skip away, but the "friendly" competition in Brass keeps things nice and close.
Maria is another specialist 3 player game I'd love to try.
