I currently have the NZXT 360 non-elite AIO to cool my 7800X3D and I'm happy. it's proven that a 360mm AIO gives you better cooling performance than a large air cooler depending on the AIO. In my opinion, a air cooler like Peerless Assassin SE is enough for 7800X3D. And if you still want an AIO cooler, a 240mm AIO or larger will suffice for the 7800x3D. Choose based on case compatibility; a 280mm offers slightly more cooling headroom. Despite the CPU's ~100W full load, higher temperatures are due to IHS and 3D cache design, not inadequate cooling. Larger radiators won't significantly impact temperatures for this processor. For example the ARCTIC Liquid Freezer III 240 A-RGB is a good choice for 7800X3D.

You'll be fine with 240mm AIO and up easily. I'd get whatever fits in your case, a 280mm will just give you a little more headroom before fans ramp potentially. The 7800x3D pulls like ~100 watts full core load at most. Yes it'll run hotter at a higher temperature but that's because of the IHS and 3d cache design, a bigger radiator isn't going to help.

Don't bother with water cooling unless you want it for aesthetics, 7800X3D is very efficient. Peerless Assassin SE is cheap and the best air cooler at the moment.
