I currently have and use all three grinders in your post. I have an encore at work, a Gen 2 Ode at home, and a ZP6 for travel / certain coffees. With a classic profile, like Supernova by Hatch, the grinders work as follows Encore: Syrup mouthfeel. Chocolate is the most pronounced taste. 'Best' version of diner coffee. This is a classic cup of coffee and I enjoy it while I am at work. Ode G2: Able to highlight the acidity with a finer grind or make a complex cup of classic coffee with a good mix of sweetness, acidity, and mouth feel with a coarser grind. ZP6: Does not work with a classic coffee. It's obviously drinkable, but I prefer the cup from the encore. With a very lightly roasted natural, like Volcan Azul by Subext Encore: Hard to pick out specific notes and vibrancy is muted; however, I prefer a a light roast in the Encore to a medium/dark in the ZP6. Ode G2: Retains the consistency of coffee. Flavor separation is present, but you might have to hunt for it. The dial range means changing pour technique instead of just adjusting grind size. ZP6: Separates the flavors and is a very unique experience. It is not a comforting cup to sip on but if you want to explore coffee, it is a great way to work on tasting ability. Tea like refers to the texture of the coffee. The coffee from the ZP6 has the mouthfeel and consistency of a cup of tea. If you are used to classic coffee texture, it can be off-putting. If you want to learn to pick out individual flavors, it is invaluable. But it isn't for everyone. If I could own only one grinder for filter from your list, it would be the Ode G2. However, since you already have the Encore, I the ZP6 as it will provide a much bigger 'upgrade*' in terms of what you will get out of the cup. * Upgrade is subjective, there are coffees that I strongly prefer in the Encore.

It's difficult to explain things like "tea like" without you having another point of reference to refer to. Have you ever had a cup of tea without milk or anything added? The body is thin and watery, whereas coffee from something like your Encore will have more body to it, so feel thicker in the mouth. The ZP6 can produce very tea like brews, and can also produce richer thicker brews but it doesn't excel at those. The Ode is the more versatile of the two. The stock Gen 2 burrs are great and harder to get offensive flavours out of than some. But you'll also have the option of swapping the burrs out for one of the dozen or more other 64mm burrs that fit.

Any upgrade from a Skerton is worthwhile ;) The Skerton grinds erratically, being more a crusher than a grinder, and it's so. terrifically. slow. On the other hand I suspect a Fellow Ode is more than you need or want.

Knowing little about you, I have to make some guesses. It sounds like your tastes run toward what a coffee hobbyist might describe as — forgive me — uncomplicated coffee. The Ode is more for people who want to tinker with the parameters of their brews, searching for flavour nuances. It has flat burrs for one thing, which may require alignment: partially disassemble, install shims so the flat burrs are precisely parallel.

A Kingrinder would be a big improvement over a Skerton, and the K6 is a particularly nice choice from their lineup. I think you would be pleased with a K6 for a very long time. Timemore is another well-received brand. Personally I use a 1Zpresso hand grinder. Same idea, some improvements.

In electric grinders you'll see the Baratza Encore recommended widely for beginner enthusiasts. I have used and don't like the Encore. I might recommend a Turin SK40 (though not at full suggested retail price!) or a Lagom Mini for you in electric (though I have never used either). If it's the toil of grinding coffee in a Skerton that wears you down, any of these choices will be a refreshing upgrade.

While I'm at it, I might mention the Moka pot for brewing, in case you are unfamiliar. It makes stronger coffee than pour-over, though still weaker than espresso. Personally I prefer pour-over, in a somewhat complicated style.
