I have had many knifes/brands of all prices, and honestly you can’t go wrong with a Victorinox Fibrox Chef's Knife. Grab a paring knife and a serrated knife of the same range and a honing steel. Use the steel before each use and it will be a work horse. From here you can experiment with other knifes as you gain experience etc. Answer from Bowerbyrd1 on reddit.com

High End Damascus Kitchen Knife set Recommendation?
There are a bunch of kitchen knife forums that are extremely active. Look up the Kitchen Knife Forum, the Chef Knives to Go forums, and Chef Talk. If you want traditional Japanese knives I don't know if any of those brands are going to be a good fit. Maybe Tojiro, but they shine best in the lower price brackets. Shun knives are extremely commercial, Mcusta knives are quite modern, and Miyabi is German. For what it's worth I think Miyabi and Mcusta both make great knives, just not particularly traditional ones. Your proposed set is not bad, though high end bread knives are usually a scam. The Tojiro ITK is possibly the best bread knife on earth. Add in a 150mm petty for utility tasks and decide whether you want a nakiri or a Chinese cleaver. Nakiri are actually quite small and neither is suitable for use as a Western cleaver; forthat look at a Western deba. For a slicer you want a sujihiki. Traditionally the sashimi and sushi knife is a yanagiba, but they're difficult to maintain properly. Finally, I'm happy to spend all your money, but an idea of what you want to spend would help. If you want Damascus you might consider a Sukenari or a Saji. If you want an even more traditional style you could get some kurouchi clad knives like a Kurosaki or a Takeda. And there are many old school knives that just feature a carbon core steel and a stainless cladding. Feel free to mix and match. If that gets costly you can prioritize on a gyuto and petty; I would rather have a $250 gyuto and $40 petty than $1000 in other miscellaneous knives. More on reddit.com

I’ve been trying to upgrade my kitchen with a solid knife set, but honestly, it’s been tough to find one that actually works for me. Between issues with sharpness, balance, durability, or just not getting the right grip feeling a bit stuck.
So many options stainless steel, high-carbon, Damascus, ceramic, plus ergonomic handles.
Anyone found a knife set that truly improves cooking? Looking for great edge retention, comfy handling, and lasting sharpness recommendations welcome
I’ve seen brands like:
Wüsthof
Shun
Victorinox
Zwilling

Don't get a set unless you really know how to use all the different types of knives. Just get a good chef's knife, a cheap set of shears, and maaaybe a bread knife (which also should be super cheap). I like the Zwilling Pro 8-inch chef's knife. The way the bolster is designed makes it super comfortable for the pinch grip, and you can slice with the heel of the knife, which is great if you're doing very fine cuts, like mincing garlic or shallots.

I Sliced and Diced 20 Pounds of Produce to Find the Best Knife Sets
July 10, 2025 - Before and after testing, the knives registered as sharper than others straight out of the box. The handles are straight with no butt and round with a slight D-shape for extra grip. This style allows hands of all sizes to grasp easily without sacrificing security or dexterity. The variety in this set is great: It includes a paring knife, a santoku, a Gokujo boning knife, a chef’s knife, a slicing knife, a bread knife, kitchen shears, a honing steel, and an attractive bamboo storage block to hold it all in.

r/TrueChefKnives/ generally, knife sets are not a good investment. they tend to be low quality and comprised of more knives than you need. a good 8-10 "chefs knife" can do just about everything you need to do in the kitchen. start with that and branch out from there. most professional chefs use mass produced mid tier knives. $50-120. they work great and last a long time but aren't super precious. Victorinox, Tojiro DP, Misono, Global, Wusthof, and Henkel are all fine options. 7 years ago I personally decided i wanted a few really nice knives in the kitchen. I got a Mazaki 240 gyuto in white #2 steel, and 3 high end stones to sharpen them. (i now have many more) this investment of 1 knife and the stones set me back over $600. the knife needs to be babied. it's not stainless, needs to be wiped after each use, and requires regular sharpening. You can't leave it dirty. Can't leave it in the sink. For these reasons, I can't say I recommend this route for the average home cook. It's kinda like owning a high end sports car or an alfa romeo. it will need regular maintenance. but it will give you immense pleasure when you use it. after you get the chefs knife, you can look at a smaller petty knife, possibly something like a nakiri, a chinese vegtable cleaver, etc for more specialized tasks.
